Strawberry Fruit Fool
Ingredients
500g strawberries
100g icing sugar
Juice of one lemon
40g caster sugar
250ml double cream
250ml Greek yoghurt
Preparation
Blitz 400g of strawberries in a food processor with the lemon juice and icing sugar until smooth. Dice the remaining strawberries and sprinkle with the caster sugar.
Whip the double cream then add the yoghurt. Whip until stiff, then fold in the puréed and diced strawberries.
Pour the mixture into glasses and leave to set in the fridge for 30 minutes.
