Grilled Sardines with Garlic and Thyme
Serves 2
Preparation time 15 minutes
Cooking time 10 minutes
Ingredients
8 Sardines, cleaned and gutted
6oz/170g Maris Piper, boiled in there skin
2 ripe tomatoes
1 red onion
6oz/170g rocket salad
A couple of thyme sprigs
2 garlic cloves
1 lemon
Olive oil
Sea salt and black pepper
Method
1. Remove the heads from the sardines, then cut open the belly starting at the head and going to the tail, now open out. with the flesh side down press on the back bone, turn over and lift out the bones.
2. Place the sardines on a tray with the garlic and thyme, season and drizzle with olive oil. Grill for 3-4 minutes or until fully cooked through.
3. Meanwhile, peeled and dice the potatoes, slice the tomatoes and onion, and toss through the rocket with olive oil.
4. Serve the sardines with the salad, a slice of lemon a chunky piece of bread.
